Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the granulated sugar, brown sugar, and vegetable oil.
- Add the eggs one at a time, whisking thoroughly after each addition.
- Stir in the vanilla extract.
- Gradually fold the dry ingredients into the wet mixture until well blended.
- Gently fold in the chopped apples and nuts, if using.
Baking
- Pour the batter into a greased 9x13 inch baking dish and bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for up to a week. You can use frozen apples or applesauce as substitutes. Consider adding nutmeg or swapping raisins for nuts for a twist.
