  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon
Wet Ingredients
  • 1 cup granulated sugar
  • ¾ cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract

  • 3 cups peeled, chopped apples Granny Smith is recommended for a sweet-tart balance.
  • 1 cup chopped nuts Optional, for added crunch.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the granulated sugar, brown sugar, and vegetable oil.
  4. Add the eggs one at a time, whisking thoroughly after each addition.
  5. Stir in the vanilla extract.
  6. Gradually fold the dry ingredients into the wet mixture until well blended.
  7. Gently fold in the chopped apples and nuts, if using.
Baking
  1. Pour the batter into a greased 9x13 inch baking dish and bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for up to a week. You can use frozen apples or applesauce as substitutes. Consider adding nutmeg or swapping raisins for nuts for a twist.
