Preparation
- In a pot, combine the rice, chicken broth, turmeric, bay leaf, and a pinch of salt. Bring to a boil, then lower the heat, cover, and let it simmer for about 15-20 minutes or until the rice is tender and fluffy.
- While the rice is cooking, season the steak generously with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Add the steak to the skillet and cook according to your preference—about 4-5 minutes per side for medium-rare. Once cooked, remove from heat and let it rest for a few minutes before slicing.
- In the same skillet, add the remaining tablespoon of olive oil and toss in the shrimp. Sprinkle the jerk seasoning over them and sauté until they turn pink and opaque—about 2-3 minutes.
Serving
- Fluff the yellow rice with a fork, then serve it on plates. Lay the slices of steak on one side and the jerk shrimp on the other. Drizzle any leftover pan juices over the top for extra flavor.
Notes
You can substitute jerk seasoning with your favorite spice blend, and let the steak rest after cooking for juicier results. For a vegetarian version, use grilled veggies or marinated tofu with the same seasonings.
