  • 2 tablespoons Olive Oil For that gourmet touch
  • 2 cloves Garlic, minced Can you smell it already?
  • 5 ounces Fresh Spinach Or frozen if that’s what you have on hand
  • 1/2 cup Sun-Dried Tomatoes, chopped The star of our show
  • 1/4 cup Parmesan Cheese, grated Optional but highly recommended
  • to taste Salt and Pepper
  • a pinch Red Pepper Flakes If you like a little kick!

Method
 

Preparation
  1. Start by bringing a large pot of salted water to a boil.
  2. Cook spaghetti according to package instructions until it’s al dente (usually about 8-10 minutes).
Sautéing the Flavors
  1. In a separate large skillet, heat olive oil over medium heat.
  2. Add minced garlic and cook for 1 minute until fragrant, then toss in the fresh spinach. Sauté until wilted (about 2-3 minutes).
Mixing the Dish
  1. Add sun-dried tomatoes and let everything blend together for another minute.
  2. Drain the spaghetti and add it to the skillet, tossing everything together with salt, pepper, and red pepper flakes to taste.
Serving
  1. Top with grated Parmesan cheese if desired.
  2. Serve immediately and enjoy!

Don’t worry if your sauce looks a little lumpy—it’s all part of the magic! Adjust the spinach as needed and feel free to add cooked chicken or shrimp for a protein boost.
