  • 2 stalks celery, diced
  • 4 cups vegetable broth homemade or store-bought
  • 1 medium zucchini, diced
  • 1 medium bell pepper, chopped
  • 2 cups spinach or kale
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme fresh or dried

Cooking Steps
  1. In a large pot, heat the olive oil over medium heat. Toss in the chopped onion and sauté it until it's translucent—about 4-5 minutes.
  2. Stir in the sliced carrots and diced celery, giving them a quick toss for about 3 minutes.
  3. Next, add the vegetable broth, zucchini, and bell pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  4. After the veggies are tender, mix in the spinach or kale, garlic powder, thyme, salt, and pepper. Let it simmer for an additional 5 minutes.
  5. Ladle it into bowls, maybe throw on some crusty bread if you're feeling indulgent, and enjoy the warmth.

Notes

You can substitute in your favorite seasonal vegetables or add a pinch of crushed red pepper flakes for heat. Adding puréed white beans or lentils can enhance protein without compromising lightness.
