Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients and Add-ins
  • ½ cup cold unsalted butter, cut into small pieces Make sure it’s cold for best flakiness.
  • 1 cup buttermilk Can substitute with milk and lemon juice.
  • 1 cup fresh blueberries Can use frozen if fresh is unavailable.
  • a sprinkle coarse sugar for topping Adds a sweet crunch.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the cold butter pieces and mix until it resembles coarse crumbs.
  4. Quickly pour in the buttermilk and gently mix until just combined.
  5. Fold in the blueberries carefully.
  6. On a lightly floured surface, turn out the dough and pat it to about 1-inch thick.
  7. Fold the dough over itself a few times.
  8. Use a biscuit cutter to cut out round biscuits and place them on a baking sheet lined with parchment paper.
  9. Sprinkle with coarse sugar and bake for 12-15 minutes until golden brown.
  10. Let cool for a few minutes before enjoying.

Notes

For extra flakiness, chill the butter and flour mixture. These biscuits freeze well; bake from frozen when needed.
