Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the cold butter pieces and mix until it resembles coarse crumbs.
- Quickly pour in the buttermilk and gently mix until just combined.
- Fold in the blueberries carefully.
- On a lightly floured surface, turn out the dough and pat it to about 1-inch thick.
- Fold the dough over itself a few times.
- Use a biscuit cutter to cut out round biscuits and place them on a baking sheet lined with parchment paper.
- Sprinkle with coarse sugar and bake for 12-15 minutes until golden brown.
- Let cool for a few minutes before enjoying.
Notes
For extra flakiness, chill the butter and flour mixture. These biscuits freeze well; bake from frozen when needed.
