Steak and Seasoning
  • 2 pieces ribeye steaks (about 1-inch thick)

Onions and Mushrooms
  • 1 large onion, thinly sliced
  • 8 oz mushrooms, sliced (cremini or button work splendidly)
Cooking Ingredients
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon garlic, minced
  • for garnish Fresh parsley Optional, for a pop of color.

Method
 

Preparation
  1. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
  2. Season ribeye steaks generously with salt and pepper.
Searing the Steaks
  1. Once oil is shimmering, place the steaks in the pan and sear for about 4-5 minutes on each side, adjusting time for preferred doneness.
  2. Transfer the steaks to a plate and let them rest while preparing the onions and mushrooms.
Caramelizing the Onions
  1. In the same skillet, add the remaining olive oil and 1 tablespoon of butter.
  2. Add sliced onions and cook for 10-15 minutes until caramelized and golden, stirring occasionally.
Cooking the Mushrooms
  1. Stir in minced garlic and sliced mushrooms into the skillet with the onions.
  2. Cook for an additional 5-7 minutes until mushrooms are tender, seasoning with salt and pepper.
Finishing the Dish
  1. Return the rested ribeye steaks to the skillet and top them with the onion and mushroom mixture.
  2. Let everything combine for 1-2 minutes before serving.
Serving
  1. Serve the steaks topped with the onion-mushroom mix and a sprinkle of fresh parsley if desired.
