  • 4 ripe pears (Bartlett or Bosc) Peel and core before roasting.
  • 1/2 cup maple syrup Use pure maple syrup for best flavor.
  • 4-6 leaves fresh bay leaves Adds a subtle herbaceous flavor.
  • 1 wheel Camembert cheese (about 8 ounces) Can substitute with brie if desired.
  • 1/2 cup walnuts, roughly chopped Provides a crunchy texture.
  • a pinch salt
  • to taste freshly cracked pepper Optional for added spice.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Slice your pears in half lengthwise and use a spoon to scoop out the core.
Baking
  1. Place the pear halves cut-side up in a baking dish. Drizzle them with maple syrup, sprinkle a pinch of salt, and tuck a few bay leaves in between.
Roasting
  1. Pop the dish in the oven and let the pears roast for about 25-30 minutes until tender and caramelized but not mushy. During the last 5 minutes, place the wheel of Camembert cheese on top to melt.
Finishing Touch
  1. Once roasted, remove the dish from the oven and sprinkle the roasted walnuts over the top.
Serving
  1. Serve warm or at room temperature, preferably paired with a glass of white wine or a daring red.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently to restore melted goodness.
