Ingredients
  

Pasta and Base Ingredients
  • 12 ounces Pasta (spaghetti, fettuccine, or penne)
  • 8 ounces Mushrooms (sliced, button or cremini)
  • 2 tablespoons Olive Oil (extra virgin) Use extra virgin for enhanced flavor.
  • 3 cloves Garlic (minced) Adjust according to garlic preference.
  • 1 cup Heavy Cream Substitute with half-and-half or plant-based cream if desired.
  • ½ cup Parmesan cheese (grated) Cheese is optional, but enhances flavor.
  • to taste Salt and pepper Basic seasoning.

Method
 

Cooking the Pasta
  1. Boil a pot of salted water, add the pasta, and cook according to package instructions until al dente. Drain, saving about a cup of pasta water.
Sautéing the Mushrooms
  1. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and a pinch of salt. Sauté for about 5-7 minutes until golden brown.
Adding the Garlic and Cream
  1. Add the minced garlic and cook for another minute. Pour in the heavy cream and bring to a gentle simmer. If needed, add reserved pasta water to reach desired consistency. Stir in grated parmesan until melted.
Combining and Serving
  1. Add the drained pasta to the skillet and mix well. Allow flavors to meld for another minute or two before serving.

Notes

To make it healthier, consider adding fresh spinach or cooked chicken. If the sauce looks lumpy, call it 'rustic' for charm!
