Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup brown sugar Light or dark brown sugar can be used.
  • 1/2 cup granulated sugar
  • 2 large eggs Add eggs one at a time.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Add a teaspoon of nutmeg for an extra flavor.
  • 1/2 teaspoon salt
  • 3 cups rolled oats Old-fashioned oats work best.
Mix-ins
  • 1 cup chopped cherries Fresh or dried, based on preference.
  • 1 cup raisins

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the butter-sugar mixture, mixing just until combined.
  5. Fold in the rolled oats, cherries, and raisins.
  6. Drop tablespoon-sized amounts of dough onto ungreased baking sheets, spacing them about two inches apart.
Baking
  1. Bake for 10-12 minutes until golden brown around the edges.
  2. Allow them to cool for a couple of minutes on baking sheets before transferring to a wire rack.

Notes

Consider letting the cookie dough chill for about 30 minutes in the fridge for a chewier texture. You can freeze some dough for later use.
