Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the butter-sugar mixture, mixing just until combined.
- Fold in the rolled oats, cherries, and raisins.
- Drop tablespoon-sized amounts of dough onto ungreased baking sheets, spacing them about two inches apart.
Baking
- Bake for 10-12 minutes until golden brown around the edges.
- Allow them to cool for a couple of minutes on baking sheets before transferring to a wire rack.
Notes
Consider letting the cookie dough chill for about 30 minutes in the fridge for a chewier texture. You can freeze some dough for later use.
