Ingredients
  

For the Grilled Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
For the Herb Mashed Potatoes
  • 2 pounds potatoes, peeled and chopped
  • 1/2 cup milk (or your favorite dairy alternative)
  • 1/4 cup butter
  • 2 tablespoons fresh herbs (like rosemary or parsley)
  • Salt and pepper to taste
For the Roasted Tomatoes
  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • Salt, pepper, and a pinch of sugar for sweetness

Method
 

Marinate the Chicken
  1. In a bowl, whisk together the balsamic vinegar, honey, minced garlic, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
Grill the Chicken
  1. Heat your grill or grill pan over medium-high heat. Drizzle olive oil on the grill to prevent sticking. Grill the marinated chicken for 6-7 minutes on each side, until the internal temperature is 165°F.
Boil the Potatoes
  1. Boil the chopped potatoes in salted water until tender for about 15-20 minutes. Drain and return them to the pot.
Mash with Flavor
  1. Add milk, butter, and fresh herbs to the potatoes. Mash until creamy and season with salt and pepper to taste.
Roast the Tomatoes
  1. Toss cherry tomatoes with olive oil, salt, pepper, and sugar. Spread them on a baking sheet and roast at 400°F for about 15 minutes, until they burst with flavor.
Plate it Up
  1. Serve the grilled chicken drizzled with balsamic sauce alongside the herb mashed potatoes and roasted tomatoes.

Notes

Don't skip the marinade for the chicken, even a quick 30 minutes can enhance the flavor! If you can't grill, you can cook the chicken in a skillet or oven. Add sugar to the tomatoes for optimal sweetness.
