Method
Marinate the Chicken
- In a bowl, whisk together the balsamic vinegar, honey, minced garlic, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
Grill the Chicken
- Heat your grill or grill pan over medium-high heat. Drizzle olive oil on the grill to prevent sticking. Grill the marinated chicken for 6-7 minutes on each side, until the internal temperature is 165°F.
Boil the Potatoes
- Boil the chopped potatoes in salted water until tender for about 15-20 minutes. Drain and return them to the pot.
Mash with Flavor
- Add milk, butter, and fresh herbs to the potatoes. Mash until creamy and season with salt and pepper to taste.
Roast the Tomatoes
- Toss cherry tomatoes with olive oil, salt, pepper, and sugar. Spread them on a baking sheet and roast at 400°F for about 15 minutes, until they burst with flavor.
Plate it Up
- Serve the grilled chicken drizzled with balsamic sauce alongside the herb mashed potatoes and roasted tomatoes.
Notes
Don't skip the marinade for the chicken, even a quick 30 minutes can enhance the flavor! If you can't grill, you can cook the chicken in a skillet or oven. Add sugar to the tomatoes for optimal sweetness.
