Ingredients

Mushroom Skewers Ingredients
  • 16 ounces fresh mushrooms Button or cremini work great
  • 0.25 cup balsamic vinegar For marinating
  • 3 tablespoons olive oil For marinating
  • 3-4 cloves garlic, minced More if you really love garlic
  • 1 teaspoon dried oregano Or your favorite herb
  • to taste Salt and black pepper For seasoning
  • Skewers Wooden or metal, depending on your preference

Method

Marinate the Mushrooms
  1. Wash the mushrooms and pat them dry. In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper. Toss in the mushrooms, ensuring they’re well-coated. Let them marinate for at least 30 minutes.
Prepare Your Skewers
  1. If using wooden skewers, soak them in water for about 15 minutes to prevent burning on the grill.
Assemble Your Skewers
  1. Thread the marinated mushrooms onto the skewers, leaving a little space between each for even cooking.
Grill Away!
  1. Preheat your grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally until the mushrooms are tender and have nice grill marks.
Serve and Enjoy!
  1. Remove the skewers from the grill and let them cool for a minute before serving. Enjoy as an appetizer or a side dish!

Notes

For extra flavor, brush with leftover marinade while grilling. You can also add cherry tomatoes, bell peppers, or zucchini to the skewers. Marinating for an hour or two will deepen the flavor.
