Sandwich Ingredients
  • 2 slices slices of your favorite bread The heartier, the better!
  • 1 whole ripe avocado
  • 4 slices fresh mozzarella cheese
  • 1 medium tomato, sliced
  • 1 tablespoon olive oil for drizzling on the bread
  • to taste salt and pepper
  • optional fresh basil or arugula for garnish

Method
 

Preparation and Grilling
  1. Cut the avocado in half, remove the pit, and scoop out into a bowl. Mash with a fork and add salt and pepper to taste.
  2. Preheat your grill or sandwich press. While it heats, drizzle olive oil on one side of each bread slice.
  3. On the non-oiled side of one slice, spread a generous layer of mashed avocado. Top with mozzarella slices and tomato. Optionally add basil or arugula before placing the other slice on top, oiled side up.
  4. Carefully place the sandwich on the heated grill or sandwich press. Grill until the bread is crispy and golden, and the cheese is melting, flipping halfway if necessary.
  5. Once done, remove the sandwich from the grill, let it rest for a minute, slice in half, and serve.

Notes

Feel free to substitute mozzarella for other cheeses like feta or cheddar. You can also use a skillet instead of a grill. Add spices like garlic powder for extra flavor.
