Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the Greek yogurt, honey, and vegetable oil.
- Add in the eggs one at a time, mixing well after each addition.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, and orange zest.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into a greased 9×13 inch baking pan.
Baking
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Making the Syrup
- While the cake is baking, combine the honey, water, orange juice, and vanilla extract in a saucepan over medium heat.
- Allow it to simmer for about 5-7 minutes until slightly thickened.
Finishing Touches
- Let the cake cool for a few minutes before poking holes all over the top with a skewer.
- Pour the warm syrup over the cake, letting it soak in.
- Once the cake is completely cool, sprinkle the crushed pistachios on top and garnish with orange slices.
Notes
The cake tastes better the next day after the flavors have mingled. You can also add a dash of cinnamon or nutmeg for a spicy twist.
