  • 1 lb flank steak, cut into bite-sized pieces
  • 4 medium-sized potatoes, diced (red or yellow work great)
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Tear off four pieces of aluminum foil, about 12 inches long each. Lay them out on your kitchen counter, shiny side up.
  3. In a large bowl, combine the diced steak, potatoes, minced garlic, onion powder, olive oil, salt, and pepper. Mix well.
  4. Spoon an equal amount of the mixture onto each sheet of foil, leaving some space at the edges to fold the foil over.
  5. Fold the sides of the foil over the steak and potatoes, then roll the ends to seal tightly.
Cooking
  1. Place the foil packs on a baking sheet and bake for 30-35 minutes.
  2. Once done, carefully unwrap the foil packs and garnish with fresh parsley if desired.

Notes

Feel free to customize by adding other vegetables like bell peppers or zucchini. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
