Preparation
- Preheat your oven to 400°F (200°C).
- In a small saucepan, mix cherries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture simmers and thickens, about 5 minutes. Set aside to cool.
- Unroll puff pastry sheet on a lightly floured surface and cut into 4 equal rectangles.
- In a mixing bowl, blend softened cream cheese, powdered sugar, and vanilla until smooth.
Assembly and Baking
- Place a generous spoonful of the cream cheese mixture in the center of each pastry rectangle. Top with a spoonful of cherry filling.
- Fold the pastry corners toward the center, overlapping slightly. Brush the tops with beaten egg.
- Place pastries on a lined baking sheet and bake for about 20-25 minutes, or until golden brown.
Notes
Don’t overstuff the pastries to avoid mess. A well-brushed egg wash gives a shiny finish. Consider adding a drizzle of icing with powdered sugar and milk when cooled.
