Ingredients
  

For the Pastry
  • 1 sheet puff pastry (store-bought) Using store-bought allows for shortcuts.
  • 1 egg egg (for egg wash) Provides a golden finish.
For the Cream Cheese Filling
  • 4 oz cream cheese, softened Make sure it's softened for easy mixing.
  • 1/4 cup powdered sugar Sweetens the filling.
  • 1 tsp vanilla extract Adds flavor.
For the Cherry Filling
  • 1 cup fresh or frozen cherries Either fresh or frozen works.
  • 2 tbsp sugar Sweetens the cherries.
  • 1 tsp corn starch Thickens the filling.
  • 1 tsp lemon juice Brightens the flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small saucepan, mix cherries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture simmers and thickens, about 5 minutes. Set aside to cool.
  3. Unroll puff pastry sheet on a lightly floured surface and cut into 4 equal rectangles.
  4. In a mixing bowl, blend softened cream cheese, powdered sugar, and vanilla until smooth.
Assembly and Baking
  1. Place a generous spoonful of the cream cheese mixture in the center of each pastry rectangle. Top with a spoonful of cherry filling.
  2. Fold the pastry corners toward the center, overlapping slightly. Brush the tops with beaten egg.
  3. Place pastries on a lined baking sheet and bake for about 20-25 minutes, or until golden brown.

Notes

Don’t overstuff the pastries to avoid mess. A well-brushed egg wash gives a shiny finish. Consider adding a drizzle of icing with powdered sugar and milk when cooled.
