Preparation
- Preheat your oven to 400°F (200°C) if you're opting for the baked version.
- In a large pot, boil the sweet potatoes until they are fork-tender, about 15-20 minutes. Drain and mash them in a large bowl.
- Add breadcrumbs, Parmesan cheese, green onions, garlic powder, paprika, salt, and pepper to the mashed sweet potatoes. Stir until well combined and fold in the beaten egg.
- Form the mixture into small patties, about 2 inches in diameter.
Cooking
- If baking, transfer to a lined baking sheet, spray the tops with a bit of oil and bake for 25-30 minutes, flipping halfway, until golden brown and crispy.
- If frying, heat a pan over medium heat, add oil, and cook until golden on both sides.
Serving
- Serve hot with a dollop of sour cream or yogurt, and a sprinkle of fresh herbs.
Notes
These cakes can be made ahead and refrigerated. To reheat, pop them in the oven.
