Preparation
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugars in a large mixing bowl until airy and light, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, along with the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and the chopped maraschino cherries.
- Scoop the dough onto a baking sheet lined with parchment paper, spacing them around two inches apart.
Baking
- Bake for 10-12 minutes or until the edges turn a light golden brown.
- Rotate the baking sheet halfway through for even baking.
- Cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For thicker cookies, refrigerate the dough for about an hour before baking. Be sure to pat the cherries dry to reduce moisture in the cookies.
