Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure it's at room temperature.
  • 1 cup brown sugar, packed Light or dark brown sugar can be used.
  • 1/2 cup granulated sugar
  • 2 large eggs Add one at a time.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Sifted if desired.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Add-ins
  • 1 cup chocolate chips Semi-sweet or dark chocolate.
  • 1 cup chopped maraschino cherries, drained and patted dry Patting dry is crucial to avoid excessive moisture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars in a large mixing bowl until airy and light, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, along with the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips and the chopped maraschino cherries.
  7. Scoop the dough onto a baking sheet lined with parchment paper, spacing them around two inches apart.
Baking
  1. Bake for 10-12 minutes or until the edges turn a light golden brown.
  2. Rotate the baking sheet halfway through for even baking.
  3. Cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For thicker cookies, refrigerate the dough for about an hour before baking. Be sure to pat the cherries dry to reduce moisture in the cookies.
