- In a large bowl, beat the softened butter, granulated sugar, and powdered sugar until light and fluffy—about 2 to 3 minutes.
- Add in the vanilla extract and mix until incorporated.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, beating until well combined.
- Chill the dough for about 30 minutes to help maintain cookie shape.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll the chilled dough into small balls (about 1 inch in diameter) and place them on the prepared sheets.
- Gently press down with a fork or your fingers, and sprinkle with colorful toppings.
- Bake for 8-10 minutes or until slightly underdone in the center.
- Allow to cool on the pan for a few minutes before transferring to a wire rack.
