For the Cake
  • 1 cup unsalted butter, softened Use room temperature for better mixing
  • 2 cups granulated sugar
  • 4 large eggs Free-range if possible
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour Provides structure to the cake
  • ¾ cup cocoa powder The star of the cake
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt Enhances flavor
  • 1 cup buttermilk Can substitute with milk + vinegar or lemon juice
  • 1 cup chopped pecans Use more if desired

Method
 

Preparation
  1. Preheat your oven to 350°F (about 180°C).
  2. In a large mixing bowl, beat together the softened butter and granulated sugar until it’s light and fluffy.
  3. Add the eggs one at a time, mixing in the vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
Mixing
  1. Gradually add the dry mixture to the butter mixture, alternating with the buttermilk.
  2. Fold in the chopped pecans gently.
Baking
  1. Pour the batter into a greased 9x5 inch loaf pan.
  2. Bake for 60-70 minutes, or until a toothpick comes out clean.
  3. Allow it to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Don’t skip the butter for a moist cake. Use room-temperature ingredients for best results. Store leftovers in an airtight container at room temperature for up to 3 days.
