- Melt the Chocolate: Place the chopped chocolate in a microwave-safe bowl. Heat it in 30-second intervals, stirring in between until melted and smooth.
- Mix the Filling: In a separate bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Mix until well combined into a thick paste.
- Form the Truffles: Scoop out the peanut butter mixture and roll it into balls the size of small marbles. Place on a lined baking sheet.
- Chill: Refrigerate the baking sheet for about 15 minutes to firm up the peanut butter balls.
- Coat in Chocolate: Dip each ball into the melted chocolate until completely coated. Use a fork to lift them out and let the excess chocolate drip off.
- Roll Them Up: Optionally, roll the chocolate-coated truffles in crushed peanuts or cocoa powder while the chocolate is still warm.
- Chill Again: Return the coated truffles to the baking sheet and refrigerate for another 15-20 minutes until set.
