  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
Wet Ingredients
  • cup vegetable oil
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Main Ingredients
  • 2 cups peeled and diced apples (about 2 apples)
  • 1 cup chopped walnuts
  • 1 cup raisins

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another large bowl, mix together the wet ingredients: vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients and mix until just combined, being careful not to over-mix.
  5. Gently fold in the apples, walnuts, and raisins.
  6. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 40-50 minutes, or until a toothpick inserted comes out clean.
  2. Let it cool for about 15 minutes before slicing.

Notes

Use a mix of sweet and tart apples for more complexity. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
