Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another large bowl, mix together the wet ingredients: vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients and mix until just combined, being careful not to over-mix.
- Gently fold in the apples, walnuts, and raisins.
- Pour the batter into the prepared baking pan and smooth the top.
Baking
- Bake for 40-50 minutes, or until a toothpick inserted comes out clean.
- Let it cool for about 15 minutes before slicing.
Notes
Use a mix of sweet and tart apples for more complexity. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
